
There is nothing better than simple, quick, no fuss recipes during summer. It means more time spent with your family in the garden enjoying the lovely weather. If you need some lunch and dinner ideas, here’s a few of my favourite recipes.

Sticky Chicken in 30 minutes
(adapted from The Hairy Dieters eat for life book)
This recipe is so easy, healthy and tasty. Serve with salad for lunch or chips for dinner. Goes lovely with quick and easy homemade coleslaw- recipe below.
- A pack of boneless chicken thighs
- 5 tbsp tomato ketchup
- 1 tbsp white wine vinegar
- 2 tbsp runny honey
- 2 tbsp Worcestershire sauce
- ½ tsp dried chilli flakes
- Sea salt
- Ground black pepper
Homemade Coleslaw: ¼ white cabbage grated, 1 medium carrot grated, 4 spring onions sliced finely, 75g light mayonnaise, 125g fat-free natural yoghurt- mix all ingredients in a bowl.
- Preheat the oven to 200 degrees Celsius and line a baking tray with foil
- Mix all the ingredients (except chicken) in a saucepan on a low-medium heat until slightly sticky, around 5 mins, be careful it doesn’t burn.
- Drizzle over your chicken and pop in the oven until cooked through.
- Serve with salad, rice or chips
TIP: Add to skewers for cooking on the bbq
Doner Kebabs in 20 minutes
(adapted from The Hairy Dieters eat for life book)
These are the best homemade doner kebabs I have ever had. Ever.
- 200g lean lamb leg steaks (2 steaks)
- 200g lean minced lamb
- An onion, roughly chopped
- 1 tsp ground coriander
- 1 tsp ground cumin
- Sea salt & ground pepper
- Pitta breads
- 4 tbsp fat free yoghurt
- 1 large garlic clove, grated or chopped finely
- 2 large sliced tomatoes
- A sliced cucumber
- Shredded lettuce
- To make the garlic sauce, mix the yoghurt, pinch of salt and garlic in a small bowl and set aside.
- Cut the steaks into 3cm chunks. Put the lamb mince and steaks in a food processor with the onion, coriander, cumin, salt and ground black pepper. Blitz until smooth.
- Divide the mince mixture into 4 balls. Place a ball on cling film and fold the rest of the cling film over to cover it completely. Use a rolling pin to roll the kebab mixture thinly to about 5mm. Repeat for all portions.
- Put the pittas in a toaster until warm.
- Fry each piece of lamb in a frying pan on each side until lightly browned and cooked through. Flatten the lamb into the hot pan by pressing it with a spatula as the meat cooks. Repeat for all portions.
- Cut the pittas open along one side, fill with salad and lamb. Spoon over the garlic sauce.
- Add chilli, pickles, onion as required.
Chicken, Avocado & Bacon Salad in 20 minutes
Who doesn’t love a nice chicken salad. The electric health grill makes the chicken juicy and the bacon crispy.
- 2 chicken breasts
- An Avocado
- Honey/maple streaky bacon
- Salad
- Boiled eggs
- Feta/Cheese/Olives
- Butterfly the plain or marinated chicken breast, add to frying pan or electric health grill until cooked
- Cook the bacon on the grill until cooked and crispy
- Slice the avocado and prepare the salad
- Add any dressing you fancy, caesar is nice with this
- Add boiled eggs, olives & cheese, and anything else you fancy

Summery Pasta Salad in 10 minutes
A lovely light pasta lunch, perfect for lunch. Add meat for dinner time.
- 75g pasta per person
- Chopped Cucumber, peppers & tomato
- Mayonnaise or salad cream
- Boiled eggs
- Cook pasta as instructions
- Add cucumber, peppers & tomato to bowl and add mayonnaise/salad cream
- When cooked, rinse pasta with cold water until cool
- Add to bowl of salad and mix
- Add boiled eggs

Pizza Topped Tortilla in 10 minutes
Just yum, light alternative to pizza, lovely for lunch or dinner time and good for you too.
- 6 Mini Tortilla wraps
- Chicken
- Onions
- Mozzarella & cheddar
- Garlic
- Fresh cherry tomatoes
- Rocket
- Basil
- Salt & Pepper
- Balsamic Vinegar
- Extra Virgin Olive Oil
- Turn the oven as high as it will go about 240C/220C Fan/Gas 8. Spray a bit of oil on large baking trays. Spray a little more on top of the tortillas.
- Cook chicken, garlic and onions in a frying pan until cooked.
- Add the chopped tomatoes to tortillas, add mozzarella pieces, top with the cooked chicken and onions. Top with cheddar and fresh basil then pop in oven for about 4-6 minutes.
- When cheese has melted, remove from oven and top with rocket.
- Season with a little scattering of salt and pepper, then drizzle with balsamic vinegar and some extra virgin olive oil.

Always make sure meat is cooked through before serving.
